Since I’ve been on a bit of a taco kick lately I decided to try a new recipe tonight for tinga de pollo, or shredded chicken. Using tomato sauce as a base I tossed in chipotle peppers, garlic, oregano and a bit of cumin. Turned out fantastic with avocado, crispy lettuce and coriander on top. Simple and very tasty.
